    butter lettuce
  • 1
    English cucumber, thinly sliced
  • 1
    green pepper, cut into strips
  • 1
    red pepper, cut into strips
  • 1
    punnet cherry tomatoes, halved

    fresh button mushrooms, sliced
  • 125

    smoked salmon, cut into strips
  • DRESSING
  • 50
    ml
    soy sauce
  • 50
    ml
    oil
  • 50
    g
    brown sugar
  • 125
    ml
    white grape vinegar
  • 5
    ml
    sesame oil
  • 25
    ml
    syrup
  • 12
    ml
    curry powder
  • 35
    ml
    peanut butter
  • few drops of tabasco sauce
 

Method

 
1. Use a large shallow wooden or glass platter. Place lettuce, cucumber, green and red pepper and mushroom on the platter. 2. Add tomatoes, followed by strips of smoked salmon. Do not toss. DRESSING 3. Place all ingredients in a liquidiser and process. Pour over salad just before serving. Serves 4.
