Ingredients (12)

1.00 kg pork — smoked loin
175.00 g bacon — streaky
10.00 ml fresh chillies — 573
1.00 onion — finely chopped
2.00 garlic — cloves, crushed
350.00 g lentils — brown
400.00 ml stock — chicken
440.00 g pineapple — cut into chunks
2.00 bananas — peeled and sliced
4.00 fresh chives — finely chopped
lemon — juice only
salt and freshly ground black pepper — to taste

Method:

Preheat the oven to 160 ºC (325 ºF). Place the meat on a sheet of aluminium foil and wrap tightly. Bake for 15-20 minutes per 500 g meat plus another 20 minutes or prepare according to the instructions on the packet (if there are any).
Fry the bacon till crisp and remove from the pan. Pour the olive oil into the same pan and sauce the onion and garlic till soft. Add the lentils and stir-fry for one minute. Add the stock and simmer till the lentils are soft and most of the liquid has evaporated. Add the bacon and pineapple chunks along with the juice and the bananas. Mix. Add the chives and lemon juice and season to taste with salt and pepper. Heat until warm. Slice the meat and serve with the lentils.
Garnish with mini sweetcorn.
Serves 6-8.
