Smoked pork penne with mustard

    Tyroler spek
  • 15
    ml
    oil
  • 250
    ml
    cream
  • 45
    ml
    wholegrain mustard
  • 1
    broccoli head, broken into florets and blanched
  • 500
    g
    penne pasta
  • salt and freshly ground black pepper
  • pecorino cheese, grated, to serve
 

Method

Cut Tyroler spek into strips.
Heat oil in a frying pan and fry spek until crisp and browned.
Add the cream and the wholegrain mustard and warm slightly.
Stir in the broccoli and the cooked pasta.
Season and serve with lots of grated pecorino.

COOK'S NOTE:
Tyroler spek is a piece of cured pork available at supermarkets and delis. Bacon may be used instead.
