Smoked pork chops with fruit sauce roast potatoes mixed salad

    curry powder
  • 2
    ml
    cayenne pepper
  • 2

    ground cinnamon
  • 5
    cardamom pods, seeds removed and crushed
  • 7

    Dijon mustard
  • 7
    ml
    apple vinegar
  • 15
    ml
    oil
  • FRUIT SAUCE
  • 1
    banana, mashed
  • 1
    small can or half a large can crushed pineapple
  • 100
    ml
    chutney
  • 50
    ml
    bought Mexican salsa
  • ROAST POTATOES
  • 1
    large potato per person, scrubbed clean
  • olive oil
  • fresh rosemary, chopped
  • coarse salt
 

Method

 
Remove the meat from the fridge in advance so it reaches room temperature. Blend the remaining ingredients and brush each chop on both sides with the mixture. Grill for about 3-4 minutes on both sides over hot coals or until done. Turn the meat once only and season with salt to taste. FRUIT SAUCE Blend all the ingredients for the fruit sauce and chill until just before serving. ROAST POTATOES Boil the potatoes until nearly done, halve and brush lightly with olive oil, and sprinkle with chopped rosemary. Season with coarse salt and roast for a few minutes with the meat or place in a very hot oven for 8-10 minutes Serve the chops with the fruit sauce, potatoes and a fresh mixed salad. Serves 6-8.
