Ingredients (16)

FLAVOURSOME SMOKED PORK CHOPS
8.00 pork — smoked chops
2.00 ml curry powder
2.00 ml cayenne pepper
2.00 ml cinnamon — ground
5.00 cardamom — pods, seeds removed, crushed
7.00 ml Dijon mustard
7.00 ml vinegar — apple
15.00 ml oil
FRUIT SAUCE
1.00 banana — mashed
1.00 pineapples — tinned, crushed
100.00 ml chutney
50.00 ml salsa — Mexican
ROAST POTATOES
1.00 potatoes — crubbed
fresh chillies — 573
fresh rosemary — chopped
sea salt

Method:

Remove the meat from the fridge in advance so it reaches room temperature. Blend the remaining ingredients and brush each chop on both sides with the mixture. Grill for about 3-4 minutes on both sides over hot coals or until done. Turn the meat once only and season with salt to taste.
FRUIT SAUCE
Blend all the ingredients for the fruit sauce and chill until just before serving.
ROAST POTATOES
Boil the potatoes until nearly done, halve and brush lightly with olive oil, and sprinkle with chopped rosemary. Season with coarse salt and roast for a few minutes with the meat or place in a very hot oven for 8-10 minutes
Serve the chops with the fruit sauce, potatoes and a fresh mixed salad.
Serves 6-8.
