Smoked haddock chowder

    butter

    onions, cut into wedges
  • 200

    gammon steaks, thinly sliced (or use bacon)
  • 10
    ml
    curry powder
  • 300
    g
    baby potatoes
  • 500
    ml
    chicken stock
  • 150
    ml
    milk
  • 500
    g
    skinless haddock fillets, cut into small pieces
  • 150
    ml
    cream
  • 20
    ml
    coarsely chopped Italian parsley
  • milled black pepper to taste
 

Method

 
Melt butter in a large saucepan. Add onions and gammon and cook for 10 minutes, stirring from time to time. Stir in curry powder. Halve potatoes, add to saucepan and cook for 5 minutes, then add stock and milk. Reduce heat and simmer for 15 minutes, or until potatoes are cooked. Add fish and stir in cream. Simmer for 5 minutes, or until fish is tender. Serve in warmed soup bowls, garnished with parsley and black pepper.
