Smoked chicken salad with pineapple salsa

  • selection of lettuce leaves
  • smoked chicken breasts, thinly sliced
  • coarsely chopped tomato instead of the chicken.
  • cucumber slices
  • fresh or canned pineapple rings
  • coarsely chopped pecan nuts
  • olives
  • cherry tomatoes
  • fresh dill
  • SALSA
  • 250
    ml
    olive oil
  • 10
    ml
    pineapple juice
  • 2
    canned pineapple rings
  • 1
    tomato
  • 1
    onion
  • 1
    sprig fresh dill
  • 5
    ml
    chopped garlic
  • 1
    red chilli
  • salt and freshly ground black pepper
 

Method

 
Arrange salad ingredients on a platter or in a bowl. Process salsa ingredients in a food processor until well blended and season to taste. Serve with smoked chicken salad (see recipe).
