Smoked chicken on a skewer

    smoked chicken breasts, each sliced into 3 pieces

    baby potatoes, parboiled in salted water
  • 12
    cherry tomatoes
  • 1
    fresh lemon, sliced
  • 12
    lemon leaves
  • 1
    pineapple, sliced into 12 pieces
  • 1
    green pepper, sliced into 12 pieces
  • 12
    wooden skewers
  • 350
    couscous to serve
  • 2
    Basting Sauce: cloves garlic, peeled and crushed
  • 45
    olive oil
  • 45
    balsamic vinegar


Oven temperature: Grill
1. Thread the chicken pieces, potatoes, cherry tomatoes, lemon, lemon leaves, pineapple and green pepper onto wooden skewers.

2. Basting sauce Combine all the ingredients and baste the chicken pieces.

3. Grill the skewers for three minutes, turning once. Serve on a bed of couscous, allowing about half a cup of raw couscous per person.
