60.00 ml lemon juice — fresh
45.00 ml mango atchar — chopped or hot chutney
sea salt and freshly ground black pepper
22.00 ml curry powder — medium-hot
160.00 ml oil
180.00 ml sour cream
45.00 ml water
125.00 ml fresh coriander — or fresh parsley, chopped
RICE MIXTURE
300.00 g rice — white and wild mix
15.00 ml vinegar — white wine
30.00 ml oil
salt and freshly ground black pepper
1.00 spring onions — chopped
250.00 ml sultanas — golden
6.00 chicken breast fillets — smoked
SALAD DRESSING
2.00 garlic — cloves, crushed
45.00 ml vinegar — white wine

Method:

To make the salad dressing, whisk the garlic, vinegar, lemon juice, atchar or chutney, salt and pepper together until smooth. Heat the curry powder and oil together until just warm and gradually add to the salad dressing followed by the sour cream and water. Beat well. (Add a little extra water if the salad dressing is too thick.) Transfer to a dish, add the coriander or parsley, cover and chill. Drain the cooked rice and add the vinegar, oil and seasonings to taste. Mix and set aside to cool. Add the chopped spring onions and sultanas. Cut the chicken into strips and add to the rice. Moisten with a little salad dressing. Serve on a bed of lettuce with the extra salad dressing. Serves 8-10.
