Smoked chicken and caprese tramezinni

Ingredients (11)

2 dozen pita breads — mini
500 g chicken — smoked, cubed
250 g rosa tomatoes — halved
300 g mozzarella cheese — grated
100 g pesto — basil
pepper — red, green, yellow, chunks
salt
freshly ground black pepper
garlic — cloves, crushed
green chillies — crushed
fresh chillies — 573

Method:

Braise the tomatoes and peppers in olive oil.
Add the garlic, chilli, basil pesto to taste and saute.
Remove from heat and add chicken, when completely cool add in the cheese.
Season with salt and pepper to taste.
Fill pitas/ tramezzinis and toast with garlic butter.
