    spring onions, chopped

    fresh mushrooms, sliced

    plain yoghurt

  • freshly ground black pepper to taste

  • chives or lemon rind
 

Method

 
Mix pastry ingredients to a stiff dough in a food processor. Press onto base and sides of a 23 cm diameter quiche dish, or six 10 cm dishes. Scatter meat on base of pastry shell and sprinkle with Parmesan cheese. Fry onions and mushrooms in heated butter for two minutes and spoon on top of Parmesan cheese. Beat together the remaining filling ingredients well and pour into pastry shell. Bake at 180 ºC for 35 to 40 minutes or until egg custard has set. Garnish with blanched chives or lemon rind and serve with a Greek salad. End the meal with fresh fruit rather than a rich pudding.
