Smoked Salmon Frittata

    cream

    lemon rind, finely grated
  • 1
    small onion, thinly sliced

    spring onions, chopped
  • 30
    ml
    capers, rinsed

    smoked salmon, chopped
 

Method

Preheat oven to 180ºC, grease a 20cm square ovenproof dish or baking pan. Beat eggs, cream and lemon rind in a bowl. Mix together onions, spring onions and capers in another bowl. Spread a third of the egg mixture in prepared pan, sprinkle half of the onion mixture and top with half the salmon. Repeat the layers ending with egg mixture. Bake for 30 minutes or until frittata is set and golden brown. Let set for 5 minutes before cutting.
