Small honeycomb rock cakes

    unsalted butter
  • 170
    g
    castor sugar
  • 3
    medium eggs
  • 285
    g
    self-raising flour, sifted
  • 150
    ml
    milk
  • 125
    ml
    honeycomb rock, chopped
 

Method

 
Preheat the oven to 180 °C.
Cream the butter. Add the sugar and cream, and mix thoroughly.
Add the eggs one at a time, alternating with a teaspoon of flour.
Add the milk and the remaining flour and incorporate well into the mixture.
Add the chopped honeycomb rock.
Pour the mixture into eight greased mini-loaf tins and bake for about 30 minutes.
