Slow-roasted salmon & horseradish sauce

Ingredients

    salmon fillets
  • 30
    ml
    olive oil
  • salt and freshly ground black pepper
  • 100
    g
    assorted lettuce leaves, washed
  • 100
    g
    peas, cooked
  • 24
    asparagus spears, cooked
  • HORSERADISH SAUCE
  • 125
    ml
    creamed horseradish
  • 15
    ml
    capers, chopped
  • 30
    ml
    red wine vinegar
 

Method

15 minutes
 
Preheat oven to 100 °C.
Brush the salmon with olive oil and season.
Place the greased baking tray and bake for 15 minutes or until the salmon is firm to the touch.
HORSERADISH SAUCE:Mix together the creamed horseradish, capers and vinegar.
To serve, pile salad leaves, peas and asparagus on four plates and top with fish.
Serve with horseradish sauce.
