Slimmers' trifle

Ingredients

  • 125
    g
    sponge fingers
  • 250
    g
    fresh or 1 can (410g) youngberries, raspberries or strawberries, drained
  • 45
    ml
    sherry (optional)
  • 500
    ml
    low-fat strawberry yoghurt
  • TOPPING
  • 250
    g
    smooth cottage cheese
  • 125
    ml
    plain yoghurt
  • 30
    ml
    honey
  • 2
    ml
    vanilla essence
  • almond flakes, lightly toasted
 

Method

 
Break the sponge fingers into smaller pieces and arrange in a glass bowl. Pour over a little of the drained syrup if using canned fruit. Alternatively, pour a little sherry over the sponge fingers. Place the fruit on top of the sponge fingers, reserving a few attractive pieces for decoration. Pour the strawberry yoghurt over the fruit. Mix together all the ingredients for the topping, except the almonds. Spoon over the yoghurt. Decorate with the remaining fruit and a sprinkling of toasted almonds. Chill before serving. Serves 6.
