Ingredients (9)

125.00 g sponge fingers
250.00 g fresh youngberries, raspberries or strawberries, — 1 can, drained
45.00 ml sherry — optional
500.00 ml yoghurt — low-fat strawberry
TOPPING
250.00 g cottage cheese — smooth
125.00 ml yoghurt — plain
30.00 ml honey
2.00 ml vanilla — essence
almonds — flaked, toasted

Method:

Break the sponge fingers into smaller pieces and arrange in a glass bowl. Pour over a little of the drained syrup if using canned fruit. Alternatively, pour a little sherry over the sponge fingers. Place the fruit on top of the sponge fingers, reserving a few attractive pieces for decoration. Pour the strawberry yoghurt over the fruit.
Mix together all the ingredients for the topping, except the almonds. Spoon over the yoghurt. Decorate with the remaining fruit and a sprinkling of toasted almonds.
Chill before serving.
Serves 6.
