Ingredients (7)

3.00 potatoes — boiled
50.00 g almonds — ground
4.00 garlic — cloves, crushed
1.00 eggs
salt — to taste
1.00 lemon juice
100.00 ml fresh chillies — 573

Method:

Place potatoes in a food processor and purée until just smooth.
Add almonds, garlic, egg and salt. Purée until smooth.
Mix lemon juice and oil. Leaving motor running, pour in oil mixture in a thin stream until mixture is smooth but not too thick and sticky.
Adjust seasoning, if necessary, and chill until needed.
Makes 375 ml (1 1/2 cups).
