SKEWERED MINUTE STEAKS
12.00 beef — minute steaks
sea salt and freshly ground black pepper
100.00 g cream cheese
30.00 ml oil
15.00 ml soy sauce
VEGETABLE KEBABS
16.00 garlic — cloves
3.00 courgettes
12.00 cherry tomatoes
2.00 ml salt
2.00 ml mixed herbs
APPLE AND CUCUMBER SALAD
1.00 apples — thinly sliced
1.00 spring onions — sliced into rings
1.00 cucumber — sliced
1.00 lettuce
30.00 ml lemon juice
YOGHURT DRESSING
100.00 ml yoghurt — Bulgarian
15.00 ml honey
30.00 ml fresh herbs — chopped

Method:

Place the minute steaks on a baking sheet and season with salt and pepper. Spread each steak with cream cheese and roll up. Thread three rolls onto each kebab skewer. Mix the oil and soy sauce and brush the meat with the mixture. Grill for about 10 minutes over hot coals or until just done and serve immediately.

VEGETABLE KEBABS
Sauté the garlic cloves in the heated olive oil, remove from the pan but reserve the oil. Thread the garlic cloves, courgettes and tomatoes alternately onto the kebab skewers and brush with the remaining olive oil.
Grill over hot coals until done and serve immediately.

APPLE AND CUCUMBER SALAD
Combine all the salad ingredients and sprinkle with lemon juice.

YOGHURT DRESSING
Mix the yoghurt, honey and herbs and serve with the meat and salad and chips, if preferred.
