Skewered chicken wings

Ingredients (9)

12 chicken — wings
30 ml chicken spice
2 red chilli — deseeded and chopped
2 lemons — wedges
30 ml oil
4 corn on the cob — cut into thirds
4 courgettes — large, chopped
2 carrots — chopped
200 g cherry tomatoes

Method:

Preheat the oven to 200ºC.

Snip off the tips of the wings, string onto sosatie skewers and season with the chicken spices, salt and pepper. Arrange on a baking tray with the lemon wedges and drizzle oil over. Bake in a preheated oven for 25 minutes or until cooked through.

Heat a heavy-bottomed frying pan and dry-grill the mealies until cooked through and golden brown all over. Spoon out and set aside. Add a generous shot of olive oil to the pan and fry the courgettes and carrots until cooked. Stir in the tomatoes and remove from the heat. Season with salt and pepper.
