Sirloin with cream sauce

  • 2
    kg
    beef sirloin, fat and sinew removed
  • salt, black pepper and olive oil
  • CREAM SAUCE
  • 250
    ml
    cream
  • 5
    ml
    chicken stock powder
  • 15
    ml
    brandy
 

Method

 
Season the sirloin and brush with a little olive oil. Cook the sirloin over hot coals for about 15 minutes a side, turning it only once. Wrap in aluminium foil to keep warm and slice into paper-thin slices just before serving. Prepare the cream sauce by simmering the cream, stock powder and brandy together in a saucepan for about 10 minutes until the sauce has reduced and is slightly thickened. Season with salt and pepper to taste and pour over the sirloin slices.
