Simple shortbread

    butter (not margarine)
  • 1/2
    castor sugar
  • 3
  • pinch

Using a mixer, cream the butter and gradually add the sugar, beat until light and fluffy.

Add sifted flour & salt and mix until you get a dough.

Press into a greased baking tray (mine is 30cm x 20cm) prick surface with a fork.

Bake at 160 degrees for an hour or until the shortbread colours slightly.

Cut into fingers while still warm and sprinkle with castor sugar.
