Simple minestrone

  • butter and sunflower oil for frying

    leeks, sliced

    cloves garlic, crushed

    bunch soup celery, with leaves, chopped

    large carrots, sliced

    tomatoes, chopped

    chicken stock

    white wine

    sugar

    noodles of your choice

    butter, pinto or kidney beans, drained
  • salt and milled black pepper

    chopped parsley
 

Method

 
Heat butter and oil. Sauté leeks, garlic, celery and carrots for 3 to 4 minutes. Add tomatoes and juice, stock (made with 2 cubes or 30 ml (2 tbsp) stock powder), wine and sugar and bring to boil. Add noodles and cook according to packet instructions. About 5 minutes before end of cooking time, stir in beans. Season to taste, then sprinkle with parsley. Serve with crusty bread and grated Parmesan cheese. TOTAL KILOJOULE COUNT: 4 590 kJ (1 095 Cal). A portion: 1 150 kJ (275 Cal).
