Ingredients (13)

sunflower oil — or butter, for frying
3.00 leeks — sliced
3.00 garlic — cloves, crushed
1.00 celery stalks — chopped
2.00 carrots — large, sliced
410.00 g tomatoes — chopped
1.00 Litres stock — chicken
45.00 ml wine — white
5.00 ml sugar
250.00 ml noodles
820.00 g butter beans — pinto or kidney beans, tinned
salt and freshly ground black pepper
45.00 ml fresh parsley — chopped

Method:

Heat butter and oil. Sauté leeks, garlic, celery and carrots for 3 to 4 minutes. Add tomatoes and juice, stock (made with 2 cubes or 30 ml (2 tbsp) stock powder), wine and sugar and bring to boil.
Add noodles and cook according to packet instructions. About 5 minutes before end of cooking time, stir in beans.
Season to taste, then sprinkle with parsley. Serve with crusty bread and grated Parmesan cheese.
