    large ripe tomatoes, finely chopped

    large English cucumber, finely chopped

    small onion, chopped
  • 1
    large green sweet pepper, finely chopped

    slices white bread, crumbled

    olive oil

    ml
    wine vinegar

    ml
    chicken stock
  • 125
    ml
    tomato juice
  • 2
    ml
    sugar
  • salt and milled pepper to taste
  • a few drops tabasco sauce
  • AVOCADO CREAM
  • 1
    large avocado
  • 65
    ml
    fromage frais or cream cheese
  • lemon juice to taste
  • salt and milled pepper
 

Method

 
Mix all soup ingredients together and chill. Adjust seasoning where necessary.
AVOCADO CREAM: Cut avocado and scrape out pulp, making sure that you use flesh nearest skin which adds a lovely green colour. Place avocado and remaining ingredients in a food processor and blend to a thick cream. (This can just as easily be done by hand.) Serve chilled soup with a dollop of avocado cream
