Simple Mediterranean beans

  • 2
    cans butter beans, drained and rinsed - you could use canellini beans or chickpeas instead
  • 3
    ripe tomatoes, chopped - a great way to use up soggy tomatoes
  • 1
    large onion - chop it finely
  • 30
    ml
    olive oil
  • 2
    cloves garlic, sliced
  • 1
    cube vegetable or chicken stock
  • salt and milled pepper
 

Method

 
Heat olive oil in a pot and sauté garlic and onions for five minutes.
Add tomatoes and stock, and bring to the boil.
Cover and simmer for 15 to 20 minutes - to form a good tomato gravy.
Add beans, season and simmer for a further 10 minutes,
Serves 2 as a main dish and 4 as a side dish.
Tip: the odd herb wouldn't go amiss.
Try rosemary in the cooking process, or basil or Italian parsley at the end of cooking time
