Ingredients (7)

2.00 butter beans — tinned, drained
3.00 tomatoes — ripe, chopped
1.00 onion — large, finely chopped
30.00 ml fresh chillies — 573
2.00 garlic — cloves, sliced
1.00 stock cube — vegetable or chicken
0.00 salt and freshly ground black pepper

Method:

Heat olive oil in a pot and sauté garlic and onions for five minutes.
Add tomatoes and stock, and bring to the boil.
Cover and simmer for 15 to 20 minutes – to form a good tomato gravy.
Add beans, season and simmer for a further 10 minutes,
Serves 2 as a main dish and 4 as a side dish.
Tip: the odd herb wouldn’t go amiss.
Try rosemary in the cooking process, or basil or Italian parsley at the end of cooking time
