Shortbread fingers

  • 500
    g
    soft butter
  • 275
    g
    castor sugar
  • 500
    g
    cake flour
  • 5
    ml
    salt
  • 100
    g
    cornflour
 

Method

 
Preheat the oven to 160 ºC (325 ºF). Spray two 30 x 24 cm baking trays with nonstick spray. Cream the butter and sugar together until light and creamy. Sift the dry ingredients together and add to the butter mixture, blending well. Press the mixture into the prepared baking trays. Prick the surface lightly with a fork. Bake for about 30-45 minutes or until pale brown and baked through. Cool slightly before cutting into fingers. Makes 60 fingers.
