Ingredients (11)

30.00 g butter
20.00 ml sunflower oil
6.00 chicken breast fillets — deboned, sliced
2.00 onion — sliced
1.00 green pepper — chopped
1.00 red pepper — chopped
3.00 green chillies — sliced
250.00 g button mushrooms — sliced
1.00 soup powder — brown onion
500.00 ml apricot juice — fresh
410.00 g apricots — halved

Method:

1. Heat butter and oil together in a large saucepan. Brown the chicken, then add onion, green and red pepper and chillies. Cook for about 3 minutes, then add mushrooms.
2. Mix the brown onion soup and apricot juice together and add to the chicken mixture. Bring to the boil, then reduce heat, stir in the apricot halves and simmer for 35 minutes until chicken is tender.
