Ingredients (13)

15.00 ml vegetable oil
1.00 onion — large, chopped
8.00 mushrooms — thinly sliced
675.00 g lamb mince
30.00 ml flour — cake
400.00 g tomatoes — whole peeled, chopped
30.00 ml tomato purée
10.00 ml Worcestershire sauce
30.00 ml chutney
5.00 ml fresh thyme
30.00 ml fresh parsley — chopped
salt and freshly ground black pepper
126.00 g potatoes — insatnt mashed

Method:

1. Place oil, onion and mushrooms in a large microwave dish. Cook on HIGH for 3 to 4 minutes, until vegetables are soft. Stir halfway through cooking.
2. Add mince to vegetable mixture, stir to combine. Cook on HIGH for 6 to 7 minutes, until meat is browned, stirring twice. Stir in flour and cook for a further minute.
3. Add tomatoes and next 4 ingredients to meat mixture, stir well. Cook on HIGH for 8 to 10 minutes, until mixture thickens, stirring often. Stir in parsley. Transfer to a 33 cm oval microwave baking dish.
4. Make up potato according to packet instructions. Spread over meat mixture, roughen surface with a fork. Cook on HIGH for 8 to 10 minutes, until bubbling, turning dish every 4 minutes.
