Sheila's sago pudding

Ingredients

  • 500
    ml
    sago
  • 1
    Litres
    milk
  • 1
    cinnamon stick
  • 100
    ml
    sugar
  • 3
    extra-large eggs, whisked
  • 40
    ml
    butter
  • TOPPING
  • 2
    extra-large eggs
  • 30
    ml
    butter
 

Method

30 minutes
 
Soak the sago overnight in water.
Rinse well.
Preheat the oven to 180 °C and butter a 23 x 30 cm ovenproof dish.
Slowly heat the sago, milk, cinnamon stick, sugar and eggs until the mixture comes to the boil.
Simmer until the sago is done.
Remove from the heat and stir in the butter.
Remove the cinnamon stick and pour the mixture into the dish.
Topping:
Whisk the eggs and pour over the pudding.
Dot with the butter and bake for 30 minutes or until golden brown.
