    marinade oil

    lemon juice

    salt

    freshly ground black pepper

    bay leaf
  • 3
    ml
    chopped mint or thyme
  • 2
    garlic cloves, crushed
  • 4
    soup celery stalks, finely chopped
  • 1.50
    kg
    kebabs boneless mutton or lamb, cut into 4-5 cm cubes
  • 3
    tomatoes, quartered
  • 2
    onions, each cut into 8 wedges
  • 12
    large button mushrooms
 

Method

Marinade Shake all the ingredients in a screw-top jar to blend.

Kebabs Place the meat cubes in a glass, plastic or stainless steel dish and pour over the marinade.
Cover and leave in the fridge for 8-12 hours.
Thread the meat, tomatoes, onions and mushrooms onto 4 long kebab skewers using 4-5 meat cubes per skewer.
Braai over medium coals for 12-16 minutes or until browned and done.
Baste frequently with the marinade while cooking.
Serve with pilaf or savoury rice.
