Ingredients (7)

200 ml flour — self-raising
75 ml sesame seeds
5 ml paprika
500 g kingklip — or firm fish
sunflower oil — for deep-frying
lemon — cut into wedges, to serve
sweet and sour sauce — for dipping

Method:

Whisk the self-raising flour, sesame seeds and paprika with 200ml water. Season with salt.

Cut the fish into fingers that measure about 2,5 x 7cm. Heat the sunflower oil over a medium heat. Once the oil is hot, dip the fish into the batter.

Deep-fry the fish in batches until golden, then drain on a paper towel. Serve the fish fingers with a sauce of your choice for dipping (ready-made sweet-and-sour, sweet-chilli or tartar sauce), and rice or oven-baked chips.
