Sesame-crumbed tofu salad

    firm tofu
  • 50

    cake flour

    large eggs, lightly beaten
  • oil for deep frying
  • DRESSING
  • 125

    orange juice
  • 60
    ml
    lime (or lemon) juice

    cloves garlic, crushed
  • 15
    ml
    sesame oil
  • 30
    ml
    peanut butter
  • SALAD
  • 1
    packet salad leaves
  • 50

    bean sprouts
 

Method

 
Mix together breadcrumbs, sesame seeds, spices and 5 ml salt. Cut tofu into cubes and dust with flour. Dip into the beaten egg, then coat in sesame mixture. Heat oil over medium heat and fry tofu until golden and crispy. Drain on absorbent paper. Whisk together dressing ingredients until smooth. Arrange the crumbed tofu on a bed of salad leaves sprinkled with bean sprouts. Drizzle with dressing and serve immediately.
