Ingredients (8)

4.00 duck — breasts
MARINADE
4.00 garlic — cloves
10.00 ml fresh ginger — minced
65.00 ml soy sauce
65.00 ml sherry — dry
30.00 ml honey
1.00 lemon — small, or lime, juice only
1.00 lemongrass — finely sliced, optional

Method:

Prick the skin side of each breast all over with a fork.
Mix marinade ingredients together and pour into a shallow dish.
Place chicken, skin-side-down, in the marinade.
Cover and marinate for about two hours.
Heat oils (ratio of 3/4 sunflower oil to 1/4 sesame oil, optional) until smoking.
Remove duck from marinade and place, skin-side down, in hot oil.

Cook for about a minute, turn and repeat on the other side.
Remove duck from pan, brush with leftover marinade and place on a preheated, lightly oiled baking tray. Bake in a preheated 260 ºC oven (or on the highest setting of your oven) for about 8-10 minutes.
Serve with Chinese egg noodles flavoured with very finely sliced fresh chilli and sesame seeds and a big bowl of just cooked (wilted) baby spinach.
