Semolina flower biscuits

    butter, chilled and cubed

    castor sugar

    cake flour

Beat the butter and castor sugar together until light and fluffy.

Sift all the dry ingredients together and add to the butter mixture, mixing in well and then kneading. Add the milk little by little to create a soft, pliable dough that can be rolled out.

Roll out the dough to a thickness of about 5mm on a floured surface. Cut out shapes with a cookie cutter and prick the biscuits with a fork.

Arrange the biscuits on a floured baking tray and bake for about 15-20 minutes in a preheated oven until done. Allow to cool slightly and then sprinkle with castor sugar. If you like, you can also sandwich the biscuits together with melted chocolate.
