    vanilla essence
  • 60
    ml
    sugar
  • 4
    extra large eggs
  • 500
    ml
    whipped cream
  • 200
    g
    shelled pistachio nuts
 

Method

Whisk together vanilla essence, sugar and egg yolks until pale and thick. Whisk egg whites until stiff and fold into whipped cream. Fold the cream mixture into the egg yolk mixture. Fold shelled pistachio nuts into the mixture, spoon into a bowl and chill until set. Serve with grilled fruit.
