120.00 g flour — cake
140.00 g flour — wholewheat
90.00 g oats
50.00 g coconut
50.00 ml sunflower oil
25.00 ml poppy seeds
25.00 ml sesame seeds
25.00 ml aniseed
5.00 ml Bicarbonate of soda
2.00 ml Baking powder
5.00 ml cinnamon — ground
5.00 ml allspice — ground
1.00 ml salt
200.00 ml oil
2.00 eggs
200.00 g brown sugar
50.00 ml milk

Method:

Preheat the oven to 180 ºC (350 ºF). Spray two large baking sheets with non-stick spray. Combine the cake flour, wholewheat flour, oats and coconut in a large mixing bowl and mix well. Add all the seeds, bicarbonate of soda, baking powder, cinnamon, allspice and salt. Mix thoroughly. Beat the cooking oil and eggs together until light and creamy. Add the brown sugar and beat well. Add the milk and mix well. Add to the dry ingredients and mix well. Drop teaspoonfuls of the mixture onto the prepared baking sheets, leaving enough room between the cookies for them to spread while baking. Bake for 10-12 minutes or until baked through and golden brown. Cool the cookies slightly on the baking sheets before transferring to a wire rack to cool completely. Store in airtight containers when completely cooled.
Makes 60 cookies.
