Seasonal fruits and berries in red wine

Ingredients (11)

500.00 ml wine — red
250.00 ml water
250.00 g sugar
2.00 cinnamon — stick
almonds — essence
5.00 ml vanilla — essence
orange — peel only
600.00 g plums — red
5.00 ml cornflour
5.00 ml jam — berry
2.00 berries — fresh or frozen

Method:

Bring wine, water, sugar, cinnamon sticks, essence (or use 1/2 vanilla pod, scraped) and orange peel to boil. Add plums and simmer until softened. Cool completely.
Remove and purée 3 plums and set remainder aside.
Add plum purée and 45 ml (3 tbsp) plum syrup to cornflour and stir to dissolve cornflour. Add to plum syrup with jam and berries, stirring in gently. Bring to boil, then remove from stove and cool.
TO SERVE: Place plums in soup bowls and spoon berry sauce around them.
