Seasonal fruits and berries in red wine

    full-bodied red wine

    ml
    water
  • 250
    g
    sugar
  • 2
    cinnamon sticks
  • few drops almond essence
  • 5
    ml
    vanilla essence
  • twist orange peel, pith removed
  • 600

    washed red plums
  • 5
    ml
    cornflour
  • 5
    ml
    good-quality berry jam
  • 2
    punnets fresh or frozen summer berries (blueberries, raspberries, youngberries)
 

Method

 
Bring wine, water, sugar, cinnamon sticks, essence (or use 1/2 vanilla pod, scraped) and orange peel to boil. Add plums and simmer until softened. Cool completely. Remove and purée 3 plums and set remainder aside. Add plum purée and 45 ml (3 tbsp) plum syrup to cornflour and stir to dissolve cornflour. Add to plum syrup with jam and berries, stirring in gently. Bring to boil, then remove from stove and cool. TO SERVE: Place plums in soup bowls and spoon berry sauce around them.
