Method:

Slice fresh red tuna into medium thick pieces (cutting it with a pair of scissors is the easiest if it’s a bit soft).
Brush with oil and sear in a seriously hot pan for about 30 seconds – the centre must be raw.
Use a potato peeler and peel a cucumber lengthways to make the ribbons.
Wrap ribbon around tuna in any way possible.
Add a dollop of mayo or wasabi paste if you like.
Serve at room temperature.
