Mix all the ingredients for the salad dressing together and set aside.
Halve the cherry tomatoes, cut the cucumber into thin chips and prepare the salad on a flat platter using the lettuce, cherry tomatoes and cucumber.
Chop the spring onion and slice the avos, then set aside.
Cut the tuna into two 250g steaks. Season the tuna with salt and olive oil.
Heat a pan with a dash of olive oil in it and once hot, drop the tuna into the pan.
Sear the steaks – about 2 minutes on either side.
Remove from heat and cut the steaks into thin slices.
Layer the seared tuna slices and avo over the salad, add the chopped spring onion and drizzle some salad dressing over the top.
