Seared fillet with deep fried julienne vegetables

Ingredients (4)

600.00 g beef fillet — whole
oil — for frying
250.00 ml mixed vegetables — potatoes, leeks and carrots, julienned
1.00 instant gravy powder — rich savoury

Method:

Sear fillet in a heated, heavy-based pan for 10 minutes on each side, or until evenly browned but still pink inside.
Rest in a warm place while deep frying vegetables in batches for no more than 30 seconds a batch. Drain on kitchen paper and keep warm.
Slice fillet and place slices on mounds of julienne vegetables.
Prepare sauce according to packet instructions, pour over meat and serve.
