Seafood parcels

Ingredients

    g
    fresh fish fillets
  • 1
    lemon, juice
  • 100
    ml
    garlic and herb flavoured cream cheese
  • 250
    g
    phyllo pastry
  • 80
    ml
    melted butter
  • 20
    ml
    olive ail
  • 2
    cloves garlic, crushed
  • 70
    g
    tomato paste
  • 3
    ml
    dried origanum
 

Method

20-25 minutes
 
1. Pour lemon juice over fish and sprinkle with salt and freshly ground black pepper. Marinate for 10 minutes. 2. Brush two sheets phyllo pastry with butter and cut into 25 cm squares. Overlap two squares to form a star shape. Place a fish fillet in the middle of the pastry. Top with a spoonful of cream cheese. 3. Draw up pastry around fish and tie closed with a piece of string or blanched chive. Place onto a greased baking tray and brush with melted butter. Repeat process to make three more parcels. Bake in preheated 180 ºC oven for 20 to 25 minutes. 4. Meanwhile, heat olive oil and sauce garlic for 30 seconds. Add remaining ingredients and simmer for 10 minutes. Serve fish parcels with tomato sauce and steamed or stir-fried fresh vegetables.
