    ½ kg king prawns de-veined and shelled
  • 0
    250gr of baby langoustines
  • 0
    100gr of mussels
  • 0
    250gr of scallops
  • 0
    ½ kilo of basmati rice
  • 0
    50gr of cumin seeds
  • 0
    3 crushed green chillies
  • 0
    1 large onion
  • 0
    1 green pepper
  • 0
    1 red pepper
  • 0
    2 tsp crushed garlic
  • 0
    Bunch of green coriander
  • 0
    10 sprigs of mint
  • 0
    4 tbs olive oil
  • 0
    100gr of salted butter
  • 0
    Saffron
 

Method

Add olive oil and butter to a pan. Add chopped onion, green and red peppers, green chilli, cumin, garlic, coriander and mint. Once onions are translucent add all seafood with salt to taste. When done add cooked basmati rice onto the seafood mix. Take saffron and dilute in a little water and pour over the rice. Then give the dish a mix evenly spreading out the rice and the seafood, add some coriander to garnish and voila the best Indian Paella you will get.
