Seafood gumbo

    packet frozen seafood mix
  • 15
    ml
    Cajun spice
  • 275
    g
    raw white rice
  • 2
    crushed garlic cloves
  • 2
    chopped chillies
  • 2
    peppers
  • 1
    cubed butternut
  • 600
    ml
    chicken stock
  • 150
    coconut milk
 

Method

 

Stir-fry seafood mix and Cajun spice until the seafood is just done. Remove from the pan. Stir-fry rice, garlic and chillies. Add two peppers and butternut. Stir-fry. Add chicken stock and coconut milk, cover and simmer until rice is cooked. Stir in the seafood.
