Scrumptious marinated chicken legs

  • 4
    large chicken legs
  • MARINADE
  • 60
    ml
    oil
  • 15
    ml
    each soy sauce, lemon juice and ginger syrup (liquid from bottled ginger in syrup)
  • 5
    ml
    curry powder
  • TO SERVE
  • lettuce leaves
  • fresh peach or nectarine wedges
  • peanuts
  • ginger in syrup or mango chutney
 

Method

 
1. Place chicken legs in a glass dish. Stir together all the ingredients for the marinade and pour over chicken. Turn a few times to coat completely. Leave to stand for at least 1 hour. 2. Grill chicken legs for 30 to 40 minutes, turning frequently to make sure they are cooked through. 3. Serve on a bed of lettuce with peach wedges, peanuts and ginger in syrup.
