Ingredients (6)

8.00 eggs
20.00 ml cream — or milk
nutmeg — ground, pinch
salt and freshly ground black pepper — to taste
185.00 g tuna — tinned and drained
fresh parsley — chopped

Method:

Beat the eggs and cream together till well blended but not foamy. Season with a pinch of nutmeg and with salt and pepper to taste.
Heat a little butter or oil in a pan and pour the egg mixture into the pan. Stir over medium heat till the egg just begins to set. Add the tuna and stir till the egg is done but still slightly creamy.
Serve with hot bread rolls or toast and a sprinkling of chopped parsley.
Serves 3-4.
