    eggs
  • 1
    thick slice white bread (crusts removed), soaked in water
  • 1
    large onion, finely chopped
  • 1
    kg
    lean mince
  • 50
    ml
    chutney
  • 50
    ml
    parsley, chopped
  • 1
    clove garlic, crushed
  • salt
  • pepper
  • dried breadcrumbs to roll the egg in
  • oil for frying
 

Method

Boil 10 of the eggs until hard, shell them and cool completely.
Combine the remaining two eggs, bread, onion, mince, chutney, parsley and garlic clove and season to taste with salt and pepper.
Pat the eggs dry with a cloth (they should be completely dry) and cover evenly with the mince. Roll each egg in breadcrumbs and fry in the oil until the mince coating is cooked through and brown.
Drain on kitchen towelling and cool.
