280.00 g flour — self-raising
20.00 ml castor sugar
2.00 ml salt
50.00 ml milk — powder, skim
150.00 ml water
60.00 ml oil

Method:

Preheat the oven to 200 ºC (400 ºF). Spray a baking sheet with non-stick spray. Sift the self-raising flour, castor sugar and salt together. Blend the milk powder and water, add the oil and beat well. Add the milk powder mixture to the dry ingredients and mix lightly with a spatula until just blended. Flatten the dough on a lightly floured surface until about 2 cm thick. Cut out scones, about 6 cm in diameter, with a cookie cutter. Place on the prepared baking sheet and bake for about 12 minutes or until risen and golden brown. Serve hot with polyunsaturated margarine, low-fat cheese or jam.
Makes 10 scones.
