Ingredients

  • BASIC SCONE DOUGH
  • 500
    ml
    cake flour
  • 15
    ml
    baking powder
  • 65
    g
    margarine or butter
  • 125
    ml
    milk
  • 1
    egg, beaten
 

Method

BASIC SCONE DOUGH
Preheat oven to 200 °C and grease a baking sheet.
Sift flour and baking powder toggether.
Rub margarine into dry ingredients until mixture resembles breadcrumbs.
Mix eggs and milk together and add to the dry ingredients, forming a soft (but not sticky) dough.
Turn onto a floured surface and pat out lightly to a thickness of 20 mm.
Cut into rounds, squares and triangles.
Bake for 15 to 20 minutes.
Serve with butter or a variety of jams.

Variations
Cheese scones:
Omit sugar and add 250 ml grated cheddar cheese and 5 ml cayenne pepper to dry ingredients.

Sweet scones:Add 125 ml currants and an extra 75 ml sugar.

Sweetcorn scones:Omit sugar and add 125 ml sweetcorn and 2 ml salt.
