Scallops with pickled ginger

    scallops in shells
  • 125
    ml
    butter
  • 6
    spring onions to garnish
  • DRESSING
  • 24
    pieces
    pickled ginger
  • 60
    ml
    soy sauce
  • 45
    fish sauce
  • 45
    ml
    lime juice
  • 5
    ml
    sugar
  • 2
    garlic cloves, crushed
 

Method

 
DRESSING: Mix all ingredients and refrigerate until required. Remove scallops from shells. Fry scallops in butter for 1 minute on each side. Remove from pan. Cool. Return scallops to shells. Spoon dressing over, garnish with spring onion curls and serve.
