Ingredients (13)

1.00 onion — large, chopped
2.00 garlic — cloves, crushed
2.00 carrots — sliced
4.00 courgettes — sliced lengthways
0.00 cabbage — head, shredded
500.00 ml long grain white rice
10.00 ml cumin — ground
2.00 ml turmeric
5.00 ml chillies — powder
1200.00 ml stock — hot, chicken
sea salt and freshly ground black pepper
125.00 ml fresh coriander — or parsley, chopped
100.00 ml margarine

Method:

Melt the margarine in a large heavy-based saucepan over medium heat.
Add the onion and garlic and sauté; until fragrant. Add the remaining vegetables and sauté; for a minute. Add the rice, cumin, turmeric and chilli powder and sauté; for two minutes.
Add the stock and bring to the boil. Cover the saucepan, reduce the heat and simmer until the rice is tender and all the stock has been absorbed, about 25 minutes.
Season to taste with salt and freshly ground black pepper and stir in the coriander or parsley leaves just before serving.
Serve with fresh bread or rolls.
