Savoury vegetable rice

    large onion, chopped
  • 2
    cloves garlic, crushed
  • 2
    large carrots, scrubbed and sliced into fairly thick strips
  • 4
    courgettes, sliced into long strips
  • head cabbage, shredded
  • 500
    ml
    long-;grain white rice
  • 10
    ml
    ground cumin
  • 2
    ml
    turmeric
  • 5
    ml
    chilli powder
  • 1200
    ml
    hot chicken stock
  • salt and freshly ground black pepper
  • 125
    ml
    fresh coriander or parsley, coarsely chopped
  • 100
    ml
    margarine
 

Method

 
Melt the margarine in a large heavy-based saucepan over medium heat. Add the onion and garlic and sauté; until fragrant. Add the remaining vegetables and sauté; for a minute. Add the rice, cumin, turmeric and chilli powder and sauté; for two minutes. Add the stock and bring to the boil. Cover the saucepan, reduce the heat and simmer until the rice is tender and all the stock has been absorbed, about 25 minutes. Season to taste with salt and freshly ground black pepper and stir in the coriander or parsley leaves just before serving. Serve with fresh bread or rolls.
