Preheat oven to 180°C and grease a small pie dish. Fry the onion in the olive oil and until translucent.
Add the mushrooms and bacon and fry for another minute or two. Add the spinach to the pan and fry for 3 minutes until it has wilted.
Place ingredients for filling into the pie dish. lay the asparagus on top.
In a separate bowl, beat the eggs and add the milk. Combine the salt, pepper, mustard and flour together and add to the egg mixture.
Pour the mixture over the spinach filling and top with the grated cheese.
Bake for +- 30-35 minutes until set and golden brown.
Enjoy hot or cold.
