Savoury spinach bake

    butter

    savoury biscuits (such as bacon flavour)

    g
    ham
  • 2
    rashers bacon (optional)
  • 1
    leek, washed and sliced
  • 500
    ml
    chopped fresh spinach
  • 4
    large eggs
  • 250
    ml
    sour cream
  • 250
    g
    cream cheese (preferably with chives)
  • 125
    g
    feta cheese
  • 60
    ml
    grated Parmesan
 

Method

 
1. Melt 60 g of the butter and mix with crushed biscuits. Spread over the bottom of a buttered 20 cm deep ovenproof dish. Chill in the fridge. 2. Chop the ham, bacon and leek and sauté in the remaining butter until soft. 3. Cook spinach in salted water, rinse in cold water and drain well. Squeeze the excess water out. 4. Place the eggs, sour cream, cream cheese and feta in a mixing bowl and beat until smooth. 5. Add the spinach and the ham mixture and mix until blended. 6. Spoon mixture onto the crust and bake at 180 ºC for about 1 1/4 hours. Sprinkle with Parmesan just before serving. Serve hot.
