Savoury roasted butternut

  • 1
    butternut
  • 2
    sweet peppers, sliced
  • 100
    ml
    olive oil
  • 50
    ml
    balsamic vinegar
  • 15
    ml
    mustard
  • herbs, salt and pepper to taste
 

Method

 
Peel and cube butternut. Steam until nearly done. Place in an oven dish with sweet peppers. Mix olive oil, balsamic vinegar and mustard. Add fresh herbs, salt and pepper to taste. Pour over the vegetables and let stand for 10 minutes. Transfer to a baking sheet and grill at 220 ºC until tender.
